About the wine
100% old vine Mencia (80 year old). Blend of 4-5 vino de viña clasificada (Cru) sites, grown on a mix of red clay, sand and slate. Grapes manually harvested. Fermentation occurs in stainless steel with indigenous yeasts at 24°C for 21 days. Aged in French oak between 12-18 months. Aged on the lees then rested in bottle for a minimum of 2 months prior to release. Aged 1-2 years in bottle prior to release.
