Grapes are soft-crushed and the must fermented for 15-25 days in French oak barrels (about 20% new). Malolactic fermentation occurs naturally during the 12 months the wine spends year of maturing on the lees, with the wine and lees regularly stirred for mouthfeel and complexity.

Tasting note

The wine shows bright straw yellow colours with golden highlights and ample aromas in scents that recall tropical fruits and grapefruit, mingling with hints of oatmeal, caramel and nutmeg. Medium-bodied with richly complex fruit flavours.

About the producer

Since joining Chamonix in 2001, winemaker Thinus Neethling continues to work the magic of this 50ha estate’s wines, following the principal that great wines begin at the vine. With some of the highest altitude vineyards in the Franschhoek Valley planted predominantly on greywacke soils, Thinus favours low yields, traditional viticultural practices and wild ferments to produce these pure and unique expressions of the terroir, which are some of the very best examples from the region.

The 2016 Chardonnay (100% varietal) is rock solid, with a beautiful freshness in its richer apple, brioche, and toasted nut aromas and flavors.
