Produced only from botrytised fruit, selected manually in successive ‘tries’. Fermentation is carried out entirely in barrel. Maturation over 24 months in 50% new oak and 50% one-year-old oak.

About the producer

Originally from St Emilion, the Fourtout family, now in its 4th generation, continue to dedicate themselves to the careful tending and cultivation of their fine vineyards. Located south of Bergerac, the estate borders Monbazillac. The vineyards themselves, mostly located on a plateau, extend over 45 hectares in area and 3 kilometres in distance, thus comprising a number of different terroirs.

The white grape varieties are planted mainly on clay/ limestone and sand or flint soils, whilst the red grapes are planted mainly on limestone soils. The viticultural philosophy is defined as environmentally friendly viticulture that is also economically viable for the producer. Chosen methods seek to maintain biodiversity in the vineyard ecosystem and its surroundings. David Fourtout, along with his close friend Luc de Conti, is considered to be amongst the very best producers in the whole of South West France.

Grapes are carefully transported to the chai, whose construction combines respect for the fruit with the latest technology. Gentle movement of the grapes on the conveyor belt, vinification in conical stainless steel vats, punching down and working with gravity are all part of David’s determination to respect the integrity of the grapes and their inherent terroir-specific characteristics. Maturation of wines continues in an ageing cellar of 600m2 carved into the rock.
