Description
Harvested by night. On the fermentation start, half of the juice is poured into oak barrels with the aim of developing more body, richness and length. Each week the lees are stirred, to get the wine as rich as possible. The other part of the juice is vinified in close vats, under temperature control. Then both of the wines are racked and blended, and then aged for three month again, fined, filtered and bottled. Maturing for 6 months in closed tanks, on fine lees, then racking, fining and bottling. This winemaking process gives a very original wine, with a superb visual as well as tasting elegance.
Tasting note
Nice brilliant and lively colour, with purple shades. On the nose, pleasant fresh fruit notes (cherry, raspberry). Refreshing and pleasant on the palate, with acidulous red fruit notes (cherry, redcurrant, raspberry). A nice length.
