About the wine
Sourced from 30-40 year old vines grown on silty/ clay soils over an iron subsoil, as well as younger vines grown on clay/ chalk soils. Each grape variety vinified separately. 100% destemmed. Fermented in open concrete vats. Gentle extraction. Matured for 17 months in a mix of foudres and barriques. No fining, no filtration.
