Description
25 years average age. Clay/ chalk soils. Meticulously sourced from 10 hectares in the north of the Entre-Deux-Mers. Machine harvest. Cold pre-fermentation maceration. 21 days fermentation at 10-18°C. 3 months on lees in stainless steel. Light bâtonnage. Fining and light filtration before bottling in February following the vintage.
