About the wine
The grapes for this wine are mainly sourced from vines between 15 and 25 years old. These vines produce a fruit that has higher acidity and concentration without becoming overripe, and with lively but ripe tannins. Scala Dei Garnatxa is fermented in small (7000 Kg) open vats using only fruit that has been selected at its optimum ripeness. The fermentation is spontaneous, using only indigenous yeasts in order to maintain the typicity of the wine. During the fermentation we taste daily, and at the end of the process we decide when and whether to press, depending on vineyard and tannins. The fermentation and skin contact is between 12 and 16 days, following which, the wine is held in stainless steel for 6-8 months before bottling.
Scala Dei Garnatxa pairs well with grilled meats, blue fish, tapas, cheese, iberian ham and all kinds of pastas and salads. It will age well, in bottle, for 4-5 years if stored correctly. This is a wine that can be served slightly chilled, 14ºC in summer and 16ºC in winter.
